  • 1 lb spicyBeef sausage (casings off)
  • 6 taco-sized flour tortillas
  • 6 pepper jack cheese sticks
  • 12 oz crawfish tails
  • 1½ cups half-and-half or heavy cream
  • 2 tbsp olive oil
  • 6 tsp Creole seasoning
  • Oil for frying
  • Chopped green onions for garnish


Instructions

  1. Warm tortillas slightly to make them pliable. Place a portion of Beef and one cheese stick on each tortilla, sprinkle with Creole seasoning, roll tightly, and secure with toothpicks.
  2. Heat oil in a skillet to 350°F. Fry chimichangas for 4–5 minutes until golden brown and crispy. Drain on paper towels.
  3. For the sauce, heat olive oil in a saucepan over medium heat and sauté minced garlic until fragrant. Stir in flour and onion flakes; then add crawfish tails and Cajun seasoning.
  4. Pour in half-and-half or cream and simmer until thickened. Stir in butter before serving.
