  • 1/3 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 medium ripe bananas, mashed
  • 1 (3.4 oz) package instant banana pudding mix
  • 1 cup cold milk
  • 1 cup whipped topping


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine crushed vanilla wafers and melted butter until well mixed. Press into the bottom of a lined 9×9-inch baking dish.
  3. Beat softened cream cheese and sugar in a separate bowl with an electric mixer until smooth. Add eggs one at a time, mixing after each addition. Stir in mashed bananas and spread over the crust.
  4. In another bowl, whisk together instant banana pudding mix and cold milk for about 2 minutes until thickened. Spread this layer over the cheesecake filling.
  5. Bake for approximately 40 minutes or until set in the center. Cool completely at room temperature before refrigerating for at least 2 hours.
