  • 1/4 cup melted coconut oil
  • 2 tablespoons almond milk or dairy milk
  • 1 egg
  • 3/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with parchment paper liners.
  2. In a large bowl, mash the bananas until smooth. Stir in honey and melted coconut oil until well combined.
  3. Beat in the egg, then add almond milk, Greek yogurt, and vanilla extract. Mix until smooth.
  4. In another bowl, combine flour, baking soda, baking powder, and salt. Mix thoroughly.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in chocolate chips.
