Ingredients
For the Salad:
2 large apples, sliced or diced
2 cups Persian or mini cucumbers, sliced
For the Creamy Yogurt Dressing:
1/2 cup plain Greek yogurt
1/2 cup fresh mint leaves
1 tsp garlic powder or 2 garlic cloves
2 tbsp lemon juice
2 tbsp apple cider vinegar
1 tsp honey
1 tbsp olive oil
Salt and pepper, to taste
Instructions
- Wash and slice the apples and cucumbers, then place them in a large mixing bowl.
- In a blender or small food processor, combine the yogurt, mint, garlic (or garlic powder), lemon juice, apple cider vinegar, honey, olive oil, salt, and pepper. Blend until smooth.
- Pour the dressing over the apples and cucumbers. Toss gently until evenly coated.
- Taste and adjust seasoning if needed.
- Chill for 10–15 minutes if desired, then serve fresh.
