  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated white sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled, cored and cut into 1/2 inch pieces)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon


Instructions

  1. Preheat your oven to 350 degrees F (180 degrees C) and grease a 9 x 4 inch baking tin. Line it with parchment paper for easy removal.
  2. In a medium bowl, combine all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk these ingredients together until well combined. Set aside.
  3. In a large mixing bowl, add room temperature butter and granulated white sugar. Mix on high speed until light and fluffy, about 3 minutes. Add in the eggs one at a time, mixing well after each addition. Whisk in the vanilla extract.
  4. Add half of the flour mixture to the batter and fold in gently until just combined. Add all of the buttermilk and mix in until combined (about 30 seconds). Fold in the remaining flour until just combined—be careful not to over mix.
  5. In a small bowl, combine diced apples, brown sugar, and remaining tablespoon of cinnamon. Toss until completely coated.
  6. Pour half of the batter into your prepared loaf tin. Evenly sprinkle over half of the apple mixture. Use a knife to gently swirl into the top of the batter. Pour over the remaining batter and sprinkle with remaining apples; gently swirl again.
  7. Bake for about 55 – 65 minutes. After 30 minutes, cover with aluminum foil to prevent excessive browning.
  8. Remove from oven and let cool on a cooling rack for about 10 minutes before removing from pan. Allow the loaf to cool completely on the rack.
